Peach Lemonade

Peaches just add a lovely mellow sweetness to this delicious lemonade. Tastes wonderful as is, but if you want to take it up a notch, just add vodka, rum or bourbon for a refreshing summer cocktail!

Makes one large jug:

– 4 cups water

– 2 cups coarsely chopped peaches

– 3/4 cup sugar (or you can use your favorite sugar substitute)

– ½ – 1 cup fresh squeezed lemon juice (use as much as your taste buds want)

– 1 peach cut into wedges for serving

– 4 cups ice

In a large saucepan combine the water, sugar and peaches and bring to a boil. Reduce heat and simmer for about 3 minutes.

Let cool to room temperature and then put into a blender. Pass the blended liquid through a sieve to remove any solids. Pour the peach liquid into a large jug and refrigerate for at least 3-4 hours.

Add the freshly squeezed lemon juice and half the ice (reserve the remaining ice for serving) and serve with the peach wedges.
