Super Easy Avocado Salad

Summer salads should be fresh, light, quick and easy. This really simple salad can be made in five minutes flat, dressing and all. The best thing is it looks fabulous and tastes even better.

Portions are really up to you—depends on whether it’s for a starter, a side dish or a lunch. For one good size lunch portion:

Salad:

1 Hass avocado

3-4 Romaine lettuce leaves

1 medium tomato (vine ripened is good)

1 tbsp chopped red onion

1 tbsp crumbled white cheese (feta, white stilton, cheshire, ricotta, goat cheese- really whatever you like)

Chop the lettuce leaves and cover the plate. Peel and slice the avocado and arrange the slices on top of the lettuce. Chop the tomato and arrange either side of the avocado. Sprinkle the onion and cheese over the tomato. I like honey mustard dressing with this. Again, something really simple, I make this in a screw top jar.

Dressing:

2/3 c olive oil

1/4 c rice wine vinegar

2 tsp honey mustard (ZAZ sweet mustard is a great brand for this)

Put everything in the jar and shake it up. Whatever you don’t need just keep in the refrigerator for another day.
