This recipe is phenomenally easy and delicious. You can make all different types of fries too, such as sweet potato curry fries or just plain sea salt and olive oil. All you have to do is follow the same process and use different spices to flavor the fries before you throw them in the oven.
Ingredients (serves 4)
8 white potatoes
¼ cup of black truffle oil
5 cloves of garlic very finely chopped
2 Tsp garlic powder
2 Tsp onion powder
3 Tbsp diced fresh chives
1/3 cup of fresh grated Parmesan cheese
Salt and Pepper
Preheat the oven to 500 – the high heat will get them nice and crispy on the outside. Wash the potatoes – I like to leave the skin on so I make sure that they are really clean. Cut the potatoes into long strips, you don’t want them to be too thick otherwise they won’t cook through.
Chop up the garlic really finely and then put the potato strips, fresh garlic, garlic powder, onion powder, chives, salt and pepper and truffle oil into a large bowl. Mix until all of the potatoes are well coated with spices.
Spread the potatoes out onto a baking sheet over a sheet of parchment paper (I used tin foil because I ran out of parchment paper but it doesn’t work as well because the fries stick to the foil). Make sure potatoes are spread out well; I suggest using two baking sheets. Pop them into the oven for 30-45 minutes but keep an eye on them! At 30 minutes or once they are really starting to crisp up take the baking sheets out and sprinkle the parmesan over the fries, don’t go crazy with the parmesan otherwise you won’t be able to separate the fries from one another. Throw them back into the oven for another 5-10 minutes just so the cheese melts and then voila, delicious, flavorful fries that you don’t have to deep fry!
