by Guest Writer

Happy Independence Day! Let’s celebrate today by showing our patriotism, and our eco-friendliness! To go along with today’s theme check out these awesome red, white and blue super foods.

Red

Tomatoes:

Tomatoes contain a high amount of the lycopene, Vitamin A, and Vitamin C. Lycopene is an antioxidant that boosts collagen products, resulting in better looking skin! Organic tomatoes contain a higher amount of Vitamin C and collagen, and may lower the risk of heart disease and high cholesterol.

Strawberries:

Strawberries contain anthocyanin, which stimulates the burning of stored fat. They also contain flavonoids, potassium, and Vitamin K. These help in lowering the risk of heart disease and reduce inflammation!

Red Bell Peppers:

Red bell peppers contain loads of Vitamin C. Almost the same amount as an orange! The Vitamin C works to boost blood vessel development, keeping them healthy and strong. These peppers also contain a high amount of beta-carotene, an antioxidant associated with decreasing the risk of eye diseases.

Kidney Beans:

Kidney beans are packed with vitamins and protein! Kidney beans create a great meat alternative for meals, and can work to lower blood pressure. Containing high amounts of magnesium, potassium, iron and protein, these beans are definitely an easy super food to sneak into your diet!

White

Garlic:

Garlic can do more than just ward off vampires. Packed full of B6, C, and Manganese vitamins, garlic works to keep your immune system healthy and strong! While doing so, garlic also works to lower blood pressure, cholesterol, and reduce the risk of heart disease.

Coconuts:

Coconut oil, dried coconut, coconut water, there’s so many ways to get some coconut in your diet! Coconuts contain the healthy fats your body needs, and are high in dietary fiber. These gems can work to improve digestion, and crave your sweet cravings!

White Beans:

White beans contain a ton of protein as well! These beans are full of fiber, ensuring a healthy gut, and contain a resistant starch. Resistant starches are the “good carbs” your body needs to sustain energy and boost metabolism.

Blue

Bear with us. Most blue foods are blue because of chemicals and dyes! Here are a few blue (and purple) super foods!
Blueberries:
At only 84 calories per cup, blueberries are a perfect snack. These little gems contain a ton of Vitamin C and fiber. Long lasting benefits include lowering cholesterol and blood pressure, and speeding up metabolism. Plus, they’re delicious!

Eggplant:

While eggplant often scares people, it’s delicious if grown and cooked properly! Eggplant is filled with potassium, fiber, and B Vitamins. These ensure healthy digestion, healthy kidneys, and a healthy heart!

Acai Berries:

Coming from the acai palm tree, acai berries are still not widely know. Acai berries are extremely high in antioxidants and can be used for healthy weight loss. These berries are packed with protein, omega 3’s, and amino acids.

Black Currants:

These small berries contain gamma-linolenic acid, otherwise known as GLA. GLA works to improve the strength of your immune system, making it more able to fight off disease. Black currants can also work to reduce inflammation and swelling.
